Cowboy Caviar:

Enjoy a fresh Cowboy Caviar that is bursting with flavor within in each bite. The first bite is never the last!

Ingredients:

  1. Place beans, corn, avocado, tomatoes, chili pepper, onion and the cilantro into a large bowl.
  2. Squeeze the lime juice over the avocados so that the avocados don't turn brown as quickly. Sprinkle in the salt and pour the Italian dressing. Stir until well combined.
  3. Cover and cool in the refrigerator for about an hour to marinate all the flavors together. Then it is ready to be served and eaten.

  1. Place the eggs into a pot and cover it with enough water that the water is above the eggs. Boil the eggs on high heat and cook it for about 3-5 minutes. Remove the eggs from the heat and leave it covered for about 15 minutes and then rinse the eggs under cold water.
  2. Crack the egg shells and peel it under cool water. Slice the eggs in half removing the yolks, placing it into a medium size bowl and place the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, salt, pepper, vinegar and mustard, and mix it well.
  3. Evenly disperse the yolk mixture using a teaspoon into the egg whites. Sprinkle over a little paprika and its ready to be served.
