10 Reasons to go Gluten-free

 

ABOUT Gluten FREEks!

Gluten FREEks was founded by me, Nicole Scher, in January of 2013.

 

The inspiration for Gluten FREEks was myself, Nicole. At age 12 when I entered middle school, the journey to my new life began and I had no idea. I noticed an itchy rash on my arms and it showed up on other spots on my body as well. After going to numerous doctors and being misdiagnosed, I finally found a doctor who would test me for gluten senstivity and Celiac disease. Turned out I did infact have Celiac disease. Celiac disease is defined as a disease in which chronic failure to digest food is triggered by hypersensitivity of the small intestine to gluten. I define it as a blessing in disguise.

Being diagnosed with Celiac is actually the best thing that could have happened to me - I know you think I'm crazy, but it really is. I am healthier now than I have ever been and I'm only getting healthier thanks to all the new things I have learned about food in general. Eating gluten-free is more easy, delicious and beneficial than people know. So, I REALLY want to spread the word and help others like myself!

My mother is an amazing cook and enjoys making gluten-free discoveries for me, more than anything else I've ever seen her do. Therefore, we determined (along with my boyfriend, Junior) that we needed to start a gluten-free catering business, so that others and their families who suffer from Celiac (or living with a Celiac) or food allergies can eat healthy, delicious, fresh food and even have some leftover for nights where cooking is not an option!
